Orzo salad with chickpeas, dill and lemon. Picked up the dill at the farmer's market yesterday. Will most likely make a simple grilled chicken breast to round out the meal.

I usually have everything but the orzo on hand, will have to try this soon!

Might be good with fluffy Jasmine Rice too...which I DO have on hand!

Thinking of a quick brown for the chops then saute finish with diced apple, pear and raisins. Over Jasmine rice.

We are staying the night, so we can go out to eat and enjoy the town. Otherwise, we would have been rushed.

Beautiful time of year to be out here.

Have to use up some ground beef
Looks like lasagna (with spaghetti instead of course) but uses a little cream cheese instead of ricotta. I keep finding interesting recipes on the wonderful free app Big Oven.

Will definitely make again!
It was melted cream cheese, an egg, spices and shredded cheese (mozzarella & cheddar mix) stirred into hot cooked spaghetti, topped with an easy meat sauce (browned ground beef & Ragu) and more cheese and baked .5 hour. Looking forward to leftovers tonite.

And it was great on the fish tacos. Yes, it goes great with chicken, too. Luckily, I had a jar in the cupboard that I bought recently because when I went to the fridge to pull out peppers and cilantro it was bare of those integral ingredients. Hope you are feeling good today!

....and some Gravenstein applesauce.

Breakfast for supper night. Was up late Saturday night working on a research project and driven by the adrenaline of my football team's 49-0 victory! Whee!

Every time there's a touchdown and I holler, my border collie barks hard. He has a green kerchief 'round his neck on game day.

I chuckle at the thought of a border collie with a green kerchief!

I met a friend for dinner. I had shaved beef rollups with onions and cheese in them and they were very good. Fries. For dessert, we shared chocolate raspberry cheesecake.

Is that a NJ specialty?

I know about German rouladen and that kind of rollup, but I don't think there's cheese in that.

I just saw something interesting on the food network. The chef sliced a whole bunch of red onions very thin, and put them into a large pot of oil on med-low heat to cook for a very long time. He ended up with crispy onions. The long cooking time gets all the moisture out of the onions. Whaddya know.
