What's for Dinner, Thurs., Jan. 25, 2024

Sausage and Spinach Tortellini Soup. Recipe is from Taste of Home. Also has onion, garlic, chicken broth, parmesan and red pepper flakes.

Corn muffins with olive oil butter.

Dessert: Fresh pineapple slice, dark Chinese tea.

toast, and coffee. Too much trouble in the morning, unless I go out to breakfast.

2. Pasta with tuna

I've been experimenting with a jar of Sonoma Gourmet Kale Pesto White Cheddar pasta sauce from the food bank.

Some results have been good (in scrambled eggs, believe it or not!) and some not so good (baked pasta topped with breadcrumbs, as suggested on the jar).

This was a good one! Maybe my favorite. Plus, Pooper got the water drained out of the tuna can, her favorite treat and extra, badly needed hydration, so it was win-win.

Side salad with basic sweet vinaigrette and tomatoes.

Dessert: bag of M&Ms.

We had errands to run, so afterward we ate out. K had a stuffed porkchop, mashed potatoes, and corn. I ate a gyro with "freedom fries."

and a green salad. We had dim sum with some friends today, so we wanted a small dinner.
