(154,021 posts)I made pozole last night, so tonight we had the left overs with eggs. The chicken had a lot of flavor already, so no extra salt or anything like that.
Pozole is tasty and all, and I use the Menudo combo of spices not the traditional one. It is easy as pie. But it is spicy. (And the hominy, get it canned, cleaning the damn corn is a bear)

(24,146 posts)french toast made with the rest of the loaf i baked saturday topped with sauteed peaches from the farmer's market and skillet potatoes. i even have bacon fat in the fridge, so the potatoes will be proper

(50,130 posts)...from the round I cooked Thursday. I'll make it with redskin potatoes, red onion, and some garden herbs. Looking forward to a fried egg with it, some grainy mustard on the side, and a cucumber salad.
Fresh peaches for dessert. I got a lot of stuff at the farmers market yesterday. Fresh baby dill, Italian parsley, tomatoes, basil, peaches, blueberries, wild red huckleberries (!!), pickling cucumbers, beautiful small red plums....
The apple man was there for the first time this season. Gravensteins were already sold out by 9:30 a.m., but he promised some for next week.
I love my farmers market. Happy people everywhere. Great food and music for lunch. Good espresso. Beautiful flowers. Nice farmers too.

For an appetizer, however, the one thing I did that was semi-original was that I picked about 10 hybrid tomatoes (perfectly round) and hollowed them out and stuffed them with tuna salad I made. I put albacore tuna, green onion, celery, hardboiled egg, and pickle juice in the tuna, along with mayonnaise, of course.

Grilled breasts and legs in a balsamic apricot reduction.
Grilled veggies in raspberry vinagrette.
Heirloom tomatoes and green beans in mint/oregano/lemon dressing.
Basmati Rice with shallots and leeks.
Made enough for a few nights....I always do that. Once the cleaners have cleaned, the most I want to make in my kitchen is a dirty martini.
