Related: About this forumBraised my first meal in my Dutch oven. Chicken curry with fennel,
carrots and waterchestnuts. Next time I will put more green curry paste in with the lite coconut milk. Also garlic and ginger instead of shallots. I put uncooked rice in too and it was perfectly done. Was pretty quick and hearty.

(118,696 posts)Cast iron with enamel. I had and old non brand named one from my mom but the enamel had fallen off in places. My brother insists I keep it as it is 60 years old. But the heat in my new Dutch oven is so even it is idiot proof.

I collect cast. It's not safe to cook in or worth anything with the enamel coming off.

(12,409 posts)Tall 5 1/2 French oven, a 6 1/2 wide round dutch oven, a regular 5 1/2 quart dutch oven, two 2 quart heart shaped one red, one white...these are my favorite go to pots..I have several others and casserole dishes, gravy thing....Yea...I love Le Creuset.

(971 posts)The heat is induced in the cooking vessel by a magnetic field.
Iron is sort of the thing for magnetism.
The customary way to test if a pot or pan is usable on an induction hob is to use a magnet. If it sticks, it is good to use.

(10,137 posts)I used to have a clay roaster but I gave it away. The best dollar I ever spent was for a Lodge cast iron Dutch oven - with lid. I had to scrub and reseason it, but it's now a kitchen workhorse. Goes in the oven or on the burner - no problem.

(55,014 posts)I tend to clean the veg drawer out when I make curry, but like a ton of onions, squash, chiles/peppers, cauliflower, even potatoes, don't care for Thai style/coconut milk.
