I'm just not cooking now under the extant personal circumstances. Why waste time cooking for one?

I will probably just throw a couple of slices of bread in the toaster and put some peanut butter on it and call it good.

Check out pinto's daily menus. He is a master at fixing easy, well rounded meals for one.

and tasty. And my mother still will hardly touch it. I guess as long as she eats enough to stave off anemia it's not her biggest issue.

She says everything tastes terrible to her, so it really doesn't matter what I cook.

I think its either just age or it's the meds she is on for various things.

It was all my husband. She had Alzheimer's and ate meat (we are vegetarian). He made a BLT with breakfast strips, fake bacon, tomatoes, lettuce, mayo, and lightly toasted wheat bread. He put a strawberry or two on the side and I think a couple baby carrots. After not eating more than about a tablespoon full of food a day she finished off the whole meal. My dad was astounded and talked about it for weeks. One of her last favorite moments in her life.

I so love my husband. He humbly shrugged and said, "It's all about presentation."

I find that to be particularly true when you are trying to get a man to pay attention.

It's all about incentive.

(I'm still pissed, btw, and the lamb chops are still in the freezer).

I live in a place where I don't have any close girlfriends to do this with, so when I am mad at him, I just have to keep it to myself.

Boxed mac and cheese!

I made one of my favorite vegetarian recipes today. It took a long time, but it was worth it. Zucchini-crusted pizza. I topped it with fresh tomatoes, onions, broccoli, red pepper, and basil, oregano, and rosemary. I used parchment paper so my crust wouldn't stick to the pan.

Absolutely fabulous meal.

the crust is made from zucchini! So you mix grated zucchini, 1 egg, 1 egg white, herbs (oregano, basil, and rosemary), 1/3 c flour. Put it over an oiled parchment paper in a pie pan or as I did, a sponge cake tin. Bake, opening the oven once to brush with olive oil.

Then put ingredients on it and bake a little more. It's very low-calorie and incredibly delicious. I think Mollie Katzen has the recipe at her site.

p.s. for gardeners among us, this is a wonderful way to use up zucchinis. I freeze the crusts and pull them out whenever I need a crust.

No slaving in the kitchen for me tonight! I will be cooking Mon-Wed all day every day next week. Big benefit party coming up on Wednesday! I'll post the menu next week. Next year, someone remind me not to volunteer to cater a party in July--PLEASE!

I'm just going to broil it plain with just salt and pepper.

I'll do a quick sautee of mushrooms and microwave some corn on the cob

I also have an avocado that needs to be cut so I'll make a simple salad with that and a tomato.

I have a wealth of fruit for dessert; Peaches, Nectarines, Apricots and some watermelon that needs to go as well.
