There are as many ways to boil eggs as there are kitchens. However I think I've finally got this down!
To begin take the eggs out of the refrigerator the day before and turn the carton on it's side. This allows the yolks to center so the white is even all the way around. Kinda' makes sense 'cause eggs don't stand on end in nature, right? A must for deviled eggs.
Next, poke a tiny hole in the large end of the egg. That's where the air pocket is and if there is a flaw in the shell the air will expand forcing the egg white to break the shell and leak into the water.
Finally, put about a half inch of water in a pot with a tight fitting lid. Bring to a boil and gently put the eggs into the pot, put the lid on and reduce the heat to keep the water simmering. Set a timer for 11 minutes (vary the time by a minute either way until the eggs are perfect to your taste). Steam one egg or a dozen it makes no difference, the time stays the same and it's extremely consistent.
When the timer goes off run cold water over the eggs and add ice to the pot to stop cooking immediately.
When cool, pour the water off, put the lid on the pot and shake the hell out of the it. An advantage of putting room temperature eggs in 212 water (or steam) is that the membrane loosens from the egg and the shells just fall off.

The rest of it, I did do, and the results were as you describe them!

(21,108 posts)where you crack the egg and bowl it in the device. I will never shell an egg again. I would absolutely try your way though.
We just put the raw eggs in a steamer and steam them for 16 minutes, chill them fast and they peal like a dream every time.

(36,487 posts)I steam for 12 minutes for perfectly cooked bright yellow yolks. My mom swore you had to boil them for 20 minutes & her yolks always had a grey ring around the outside.

(131,018 posts)Place egg(s) in pot, from fridge or not; cover with water+ a bit, place lid on pot, turn heat on 'hi.' As soon as boiling turn heat OFF (leaving lid ON,) and in 5-10 minutes, egg(s) will be 'hard cooked.'
NOW gotta go to grocery store and be frustrated 'cause they no longer sell 'small' containers of eggs with 6-8, only 12 and 24 egg containers. I don't buy such as there's just 'me' here, but looks like I gotta. (AND sad 'cause daughter no longer raises chickens, so no 'home grown' eggs around.)

(805 posts)A dozen and a half eggs on the trivet in my instant pot (aka pressure cooker). Set the temperature to high, and the timer to 4 minutes and let it go. Natural release. Perfect every time, and the steam makes them easy to peel.

(14,890 posts)In the past I'd steam them, but now I have an Instant Pot, and I use that. Perfect every time and I don't mess up my stove by having the water boil over (and awful habit of mine).
