and freeze the watermelon juice, something that's absolutely wonderful and my favorite juice of all time.

I made watermelon freezer jam two summers back, that was pretty good although I followed a recipe in the pectin and it came out kind of sweet for my taste. If I did it in the future, I think I would use a pectin that allows for reduced sugar.

buy any! I usually buy a 5lb watermelon to make enough for the two of us.

I think the frozen puree would be perfect. I usually smush mine in the food processor then add a little sugar and corn syrup, and a small bit of lemon or lime juice. It is somehow even more watermelon-y than the fresh fruit is. I think the pop of the acidic citrus turns the flavor up.
