for some red beans and rice tonight. I'm stoked. Maybe if it doesn't hit the high temperature it is supposed to get to, I will whip up some form of corn bread.

Eggplant is like heaven to me, and I want to use the rest of the zucchini and red pepper before it turns.

Will serve with a bruschetta with olive/anchovy tapenade.

And if guests show up, which they sometimes do on Wednesday nights, I am going to make more of those killer quesadillas.

Good times!

How about you?

with cuke, tomato salad and grapefruit salad and corn. Going to make myself a baked potato with all the fixins and have the leftover salad.

We're having homemade orange and raspberry popsicles for dessert if they ever freeze.

baked sweet potato (naked) and a romaine salad with tomato, onion, and avocado. Dessert was lightly poached and peeled peach, raw blueberries, garnish of fresh cherries and served with cinnamon toast made from leftover pumpkin French bread.
