(106,886 posts)Had a craving for fish 'n chips yesterday. Somewhat limited in my mobility right now, so decided to make it at home...house still smells like a fish 'n chip house, as I knew it would. Kicking myself this morning, but it's warm enough to open all the doors and windows...

(35,678 posts)I had the idea that I wanted to make a spicy vegetable soup last night, so I started cooking at 11:30 p.m. Many hours later, I was done. I think I went to bed at 2:30 a.m., but it is the most outrageous vegetable soup.

My French bread last night flopped: it came out nice and crusty on top but not crispy on the bottom. Also it came out flattish, though the texture and flavor were good. My guests only ate 2 of the 4 loaves, though they did take a loaf home. And I ate the 4th loaf at 7 AM today
So I'm making it again to see if I can do better today

(118,290 posts)I cheated on the rising yesterday, because I ran out of time: so it was, let it rise 45 min, knock it down, let it rise 45 min, knock it down, form loaves on trays, let it rise another 45 min and bake
It actually did okay: it had a nice grain to it
But I was a bit skimpy on the flour and on the kneading, so it started turning into goo on the trays while rising -- and perhaps because of the dampness it never developed a bottom crust, though it had a nice top crust at first and wasn't at all doughy. The moistness also showed up as the bread sat once out of the oven: the crispy crust gradually disappeared as the interior steamed into the crust
