(36,063 posts)and even explored curried zuch masala. Grilled summer squash with asagio has been the best recieved. Only had a few of them go rogue this year, so no pasta-free Lasagna this year. I think maybe that was a good thing.
Probably gonna be a loaf of zuchinni bread with yesterday's late-comers.
Time to move on to the hegemony of winter squash...

(6,117 posts)I make vats of rat, freeze for later. Make it a bit heavy on the tomato side so we can use as a side dish or over pasta or steamed vegetables.

"When you're faced with a glut of zucchini, turn to this easy recipe that uses squash instead of dough for a crust. For variety, add sliced, sauteed vegetables or pepperoni slices, then top with cheese.
Yield: 6 to 8 servings
3 to 4 cups coarsely grated zucchini
1 teaspoon salt
2 eggs, beaten
1/3 cup flour
1/2 cup grated mozzarella or cheddar cheese
1/2 cup grated Parmesan or Romano cheese
2 tablespoons chopped fresh basil or 1 teaspoon dried
salt and pepper to taste
1/2 cup tomato sauce
1/2 to 1 cup grated cheese for topping"

(4,458 posts)I am currently working on a "Zucchini Relocation Program" in my neighborhood.
Mixed results so far. Some people and their pets-Run, Others just give me a blank stare and others just slowly back away, muttering incoherently.
I've tried dropping them off on doorsteps, ringing the doorbell and running, somehow they always find their way back home-Next, I'm joining the other Zuch Fairies and gonna just leave 'em on the roadside, in a box marked Free to Good Homes
