Smoked the turkey, nobody even got sick

In fact, a few folks even said they liked it. All in all, it was pretty good for my first time. Learned some things and I intend to do it more (with turkeys, pork butts, roasts and briskets and such).

these pics were from about 2/3rds done - I got so excited it was working I forgot to take pics at the end. And it's all gone now lol.

My spatchcocked turkey is cooking away as I type.
It was interesting to watch the different videos about this method, and see the individual touches people made.
In the end, the process is the same...maim it, flatten it, cook it in a high heat oven and let it rest for at least 20 minutes, 30 or more is better.
We shall see.

Your bird is mouth watering gorgeous. Were ya happy with the flavor?

Mesquite would have been overpowering but the hickory was just perfect - i knew it was there but tasted mostly bird. And it made the patio smell nice too lol.

My next lesson needs to be carving. I mangled that sucker pretty badly but we all got good stuff. Best part was watching my grandpa tear into the leg and smiling with every bite..

Get a few more practice smokes under your belt, and then you can move up to the next level.
