Even thoueh these days I cut my standing rib roasts into steaks for grilling, I still save and render the fat for gravies and for Yorkshire Pudding. YUM!

3. Roast beast and Yorkshire pudding are the highlight of Christmas Day feasting

at our house.

4. I discovered it only later in life

And while I've done the roasts and puddings for dinner parties, I'm mostly by myself and grabbing the Choice roasts when they're on sale to chop into steaks. Much superior to the restaurants when you grill them yourself with a nice smoky flavor, served thin-sliced, not in a thick slab.
