I just sort of gravitated to more fish and chicken and being satisfied wih a VERY small portion of steak.

These days I can make a meal of macaroni salad. Or half a pound of bacon.

But it doesn't compare to properly cooked chorizo and eggs wrapped in a corn tortilla with homemade salsa. That just takes rendered pig lipids to a whole new level.

This is my favorite bacon. It has good smoke but also with a hint of sweetness. When cooking you should lower your temperature slightly as the higher surface sugars on the bacon will tend to burn rather than just caramelize. The very best use for this bacon is a blue cheese bacon burger prepared as follows...

Prepare burger normally. When nearly done top with bacon. Sprinkle with NO MORE than a tablespoon of crumbled blue cheese and top with a thin slice of american cheese. Using an appropriate pan lid, dome the burger for 30-45 seconds to melt the toppings...

Trust me-I'm a bacon guy and spent years as a fry cook.

Cooking eggs at or above boiling temperatures renders the egg proteins dry and rubbery.

For best results, cook eggs in the shell or poached by temperature, not time at no more than 180F, ideally less if you like softer yolks. I like mine at 148F at which point the yolks will have a custard like consistency.
