My favorite Christmas cookie is spritz butter cookies, and has been since I was a little girl. Seeing as I am now 63m we're talking a pretty long time. This is the first year I haven't actually done the whole deal with squeezing them out in a cookie press in a variety of shapes, complete with placing little silver non pareils at the top of each little cookie Christmas tree - ran out of time and energy.
So, my 92 yr old mom, who is visiting from Rochester NY, rolled the cookie dough into little balls, which I then flattened into random semicircular shapes, sprinkled on red and green sugar and cinnamon hot centers, and called it a day - or, more accurately, a night. they taste the just as good, and it was a lot faster. I put cinnamon and sugar on some of them and decided to call them Spritzer-doodles.
I told my husband and our 24 and 22 yr old sons these cookies better last at least 2 days!
