Your cheese choices are American, Provolone and Wiz. So one with Wiz and grilled onions would be "Wiz wit'". John Kerry nearly cost himself the Pennsylvania primary by ordering his with Swiss!

When I managed a sub/steak shop in State CollegePA, I was routinely lectured on the nature of the "true" Philly cheesesteak.

My experience, gleaned over those 4+ years, is this: if you ask 10 Philly residence to describe a "true" Philly cheesesteak, you will receive at least 12 different answers.
