I make a mean lobster salad sandwich. But they are messy. I'm looking for something my parents can eat sitting down watching the tv.

Beyond that, there's also completely electric grills that use no gas. They operate like a gas grill except the burner is electric, not propane. The Weber Q140 is generally considered the best of the lot unless you want to spend several hundred dollars to get something truly high-end that has only somewhat better performance.

(2,354 posts)My family made this when we were kids. We lived in the sticks, and nobody had rice vinegar back then. It tastes close enough to what you get in Japanese restaurants with the white or coder vinegars.
I also add thinly sliced onions and let the whole thing marinade for awhile. One of my favorite cold salads!

Adding tomatoes is extra delicious, and maybe a few thin sliced or green onions.
Chilled cucumber soup is also really delicious:
peel and seed cucumbers and puree them with yogurt, mint, dill, whatever herbs and seasonings you like, really. You can add a little heavy cream too if you want it to be extra luscious.

(1,136 posts)My favorite meal in the summer is a salad I make with romaine lettuce (or baby spinach), cut up chicken breast, feta cheese, pecans, diced apples, and topped with raspberry vinaigrette. Yum-o-la, quick, easy, especially if you get the rotisserie chicken already made from the grocery.

(28,945 posts)Tuna/White Bean Salad
Drain and mix together one can each water packed tuna and white kidney beans
Add
Two stalks sliced celery
Two tablespoons capers
Half of a cucumber, seeded and diced
Two bunches diced green onions
One seeded and diced green pepper
Half dozen large, sliced radishes
Dress with olive oil and lemon juice, I use quarter cup oil, half cup juice. YMMV.
With exception of the tuna and beans, all the above is adjustable to taste. I haven't tried it yet, but a bit of feta cheese could go well with it

(6,996 posts)Getting my veggies in summer is sometimes easy to forget. I make this salad to have as a side with my burgers or grilled chicken.
I use Chick Peas, Red Kidney Beans, Green Beans & Wax Beans.
Green Bell Pepper and Onion diced fine in Red Wine Vinegar and Olive Oil
with Oregano, Salt & Pepper and Sugar (important) to bring the flavors together.
Chill and let it all marinate together. My summer veggie!

(20,176 posts)Real tuna works too.
I mix mine with a dash of liquid smoke, paprika, black pepper, crab-seasoning (i.e. Old BayTM) and a high-quality mayo. (I use Duke's. It's the only one I allow in my kitchen other than homemade.) If your tuna is too moist/runny, you can thicken it by adding bread crumbs...that's what they do in a lot of delis and because the crumbs soak up the tuna flavor, the customer can't tell. (It also stretches the volume.)

My goal is to not turn the oven on. At most, I'll toast a couple of slices of bread.
Couple that with the amount I sweat while working out, and I lose a not insignificant amount of weight when it gets really hot.

This is also good served on a bed of baby spinach. Colorful veggies also make it pretty.
I use this size container of pesto:
