Me, a nice salad, I stopped by the salad bar at Hiller's and filled a small container with all kinds of things, field greens/mesclun mix, veggies, a little meat, egg, cheese. A couple of olives on top. Raspberry walnut dressing.
Pretty tasty.

(51,122 posts)I cook the rice in an electric rice steamer as the edamame cooks in an electric vegetable steamer.
Takes about five minutes to set up the cooking, five minutes to combine the ingredients in food containers, ten minutes for cleanup.
Very healthy, costs maybe a buck and a half for each lunch. People I work with think I am insane because I eat it so often.
Like I said, I get food envy. Heh.

(12,132 posts)Regular Original Italian with lettuce and banana peppers and an extra heavy dose of red wine vinegar and oil.
Unsweet tea (cutting out sugar where I can) and Garden Salsa Sun Chips. All in all a very satisfying lunch. JM knows how to make an Italian.
