I'm drinking the best fizzy beer/cider I've made yet.

I wish I remembered the recipe, but it was something like this:

I was cleaning the cupboards of expired and nearly expired stuff and I had some applesauce, canned peaches, and some kind of pomegranate tea. I boiled that all together with some brown rice and sugar, not measuring anything, did the final fermentation in 2 liter soda bottles.

Okay, it might've been the best stuff in the world had I aged and finished it in glass bottles, but it's plenty good now.

The fun now will be recreating it.

Glad it turned out good, but sorry that you may not be able to recreate the best fizzy beer/cider you've made yet.

And canned peaches too.

I was going to make a simple hard cider.

But then I thought I'd put some brown rice in it to make it more like a beer. Mostly I was thinking the mix was a little short of nitrogen. I don't use synthetic yeast nutrients and I didn't have any other sort of organic nutrient on hand.

What I got was something like a fruity lambic beer.

Whatever bacteria permeates my kitchen from my hard cider and ginger ale making seems to have fancied this mix. My technique is not particularly sterile. If a brew ends up tasting bad I pour it on the compost heap. Usually that doesn't happen. Beer or wine purists best look away... this stuff is an abomination.

My brewing is totally seat-of-the-pants but here's a Mother Earth News article that explains one process:

I pour my brews, wines, beers, or ciders into 2 liter plastic soda bottles and keep an eye on them rather than suffer glass bottles exploding or lids popping. If the pressure gets too high I simply twist the lid open a little and bleed the excess pressure off slowly. Or maybe I decide it's time to drink it.

I've brewed my own beer and I love Sam Adams Cranberry Lambic. I like the soda bottle idea!
