My father in law did it once and all thanksgivings since have been dull.


However, a co-worker who also was firmly in the fried camp is trying something different this year - he's gonna inject it like fried turkeys do but then he's gonna grill/smoke it in his Char-griller. I am interested in how it turns out because I have the exact same grill he has and I might give it a try next year.

There are new machines for frying that are very safe.

If you follow instructions.

I do both, but I inject them the same. The white meat is so dry it needs injection either way, but more so when it's smoked.

We both have that dual chamber Char-griller - one side is gas and one is charcoal. He went ahead and bought the smoke box attachment for the charcoal side but he says he won't use it for this turkey. he will put in a small metal box of soaked wood chips though but just in the main chamber.

He showed me the website where he got his instructions and I have to admit it looked good on paper. Well, pixels.

I'm hoping to get the smoke box for christmas - gonna get some mesquite chips and slow cook a brisket.

It takes a few turkeys to learn how.

Some are over cooked.

Just takes a little practice.

I'll get back to you on that. The Peruvians I used to work with are experimenting, they're going to try prepping and throwing one on the rotisserie "Peruvian Chicken" (Pollo la braza) style and serving it with the green sauce and the yellow sauce.

(I'm just going for the sauce. I don't eat meat, so I'll be taking their word on it. I figure it's going to take a while to cook.)
