Boneless chicken breasts marinated in sour cream, dijon mustard, and garlic then breaded with corn flakes and onion soup mix. Mashed potatoes and corn. mmmmm mmmmm!

I assume you could do either. I bake it. The sour cream/mustard mixture is a marinate and helps the corn flakes and onion soup mixture stick to the chicken breast. It also keeps the chicken moist. Here's the recipe if you want to try it...

Today that was onions, garlic, swiss chard, a couple of the last tomatoes, and some peppers.

I scored a loaf of Italian bread at the bakery this morning so I served it with that and some apple slices from the tree out front.



I almost always have a 2lb bag of Mrs. T's potato and cheddar pierogis in the freezer for these kinds of nights when my brain draws a blank on what I'm cooking for dinner.

for inspiration, today I was not up to the task of doing anything more than slamming a frozen dinner onto a cookie sheet and into the oven. (Only my younger son and I home for dinner.)

With my idiot proof recipe from the "I Never Cooked Before Cookbook".
New York Strip steak, canned beef gravy, sauteed onions, and a few seasonings. And sour cream of course.
