I am on vacation...ask me anything!

Two weeks at a teeny tiny island off the coast of NC, just got here yesterday. Obama signs everywhere!

Last night - fresh scallops. Just now - shrimp.

Yes, I am keeping an eye on DU/politics/polls. But mostly I want to start my book, take endless walks on the beach with my wife and our two dogs, kayak in the estuaries, and take lots of pics.....

Will be starting to volunteer for Obama when we return. But these two weeks...mental health break!

We've probably been here 30 times in the 20 we've lived in NC - experienced all sorts of weather. No more summer trips -we wait til offseason - rates go down, tourists go away!

18. Camping on Okracoke with 3 kids.

I'm not a big fan of beach camping as it is - too much sand and not enough shade.

Anyway, we had not real communication, but could see this storm blowing up over the ocean.

It turned out to be a doozy. Took out every tent on the beach, including ours. As I recall, it was almost impossible to get off the island and what available hotel rooms there were were quickly snapped up by campers more savvy than we.

The five of us slept in the car until we could get out of there the next day.


I have never had any desire to return. I don't like to be in places that are hard to get out of (think New Orleans).

we'd never camp here because of that - but renting a nice house off season is pretty reasonable, comparatively speaking....

that's quite a story!

we brought lots of pre-made good stuff with us (in the freezer) to sprinkle between the various fish meals!

Hi,
Wow, now those sound good, I love love love the sea ones. I have only been near Asheville and want to get to the coast down there sometime. It sure is a beautiful state.

Just got back from 2 weeks in France.

Can't wait to go back -

a few showers on Sat, yesterday and this AM - but enough spaces to get some good walks in. Starts getting sunny on Tuesday according to the forecast - hoping that's when we can get the kayaks into the sound.

26. RECIPE alert - what I devised for our shrimp last night....

marinate 1 lb of shelled medium shrimp in 1/4 cup or so of Trader Joe Island Teriyaki marinade in the refrigerator for a few hours

Chop into bite sized pieces: 2 sweet bell peppers, 2 anaheim chile type peppers (seeds removed), 1 large sweet onion, 1 thick slice of pineapple (cored, peeled), 2 summer squash

mince 1 inch piece of ginger and 4 peeled cloves of garlic

handful of roasted peanuts

salt, pepper, hot red pepper flakes to taste

Get some brown rice cooking

In a large frying pan put 2 tbsp olive oil - stir fry the garlic, ginger, and prepared peppers and onions until just limp over med high heat - about 5 min. Add the pineapple and summer squash, 1 tsp salt, some grinds of black pepper, a pinch of red pepper flakes, and 2 tbsp or so of the Teriyaki marinade - stir fry for another 5 min - transfer to a large bowl, cover

Return pan to the stove, add 1 tbsp olive oil, then the shrimp and marinade mixture - stir fry 3-4 minutes, until the shrimp are pink and starting to firm up (don't overcook!) - add to the veggies in the large bowl, combine - serve over rice, sprinkled with some of the roasted peanuts.

Yum! We ate half last night, just finished the rest for lunch.
