The web dictionary suggests it's the fruit of a persimmon. Apparently the parish is named after the native persimmon.

Emphasis on the first syllable. More or less. One thing I learned working down there is that my high school and college French (pronunciation) was useless. Sometimes it helped, sometimes not.
