1.On the Format menu, point to Background.
2.Do one of the following:
Click the new color you want.
Click More Colors to see additional color choices.
Click Fill Effects to change or add special effects, such as gradients, textures, or patterns.

(31,110 posts)3. Thanks, Ptah! It's changed a bit in 2010, but you got me on the right path.
Page Layout Menu
Go to Page Background group.
CLick on Page Color and adjust the colors.

(48,217 posts)2. You're going to have invisible type for a bit but here's what to do:
I'm working with the Mac version (2011), but I'm sure the basic procedure is the same:
1. Select the entire file
2. Go to Format>Font
3. There should be a Font Color tab. Change it to Black.
You will now have a solid black document, but never fear, now go to Format>Borders and Shading>Shading.
Somewhere, you've got a pull-down menu labeled style. It is probably set at Solid. Change it to Clear.
Save.
