Good hot or cold!

Of course it is best when you buy the shrimp straight off the boats in Panacea or Alligator Point adn cook them as soon as you get home. But those days are nearly gone now - not too many of the shrimpers or the shrimp survived the BP oil disaster or the various hurricanes and storms that have hit the coast south of here.

We have a couple of places here that make a fantastic Mexican version with pico de gallo, avocado chunks, cilantro, lime and chips. Served in a big beer schooner.

Back when I lived in Cambridge MA there was a little Cantonese place next door to my workplace that made the absolute best fried shrimp I have ever eaten..butterfly shrimp was what they called it. I have never run across anything like it since.
