Grilled, Bacon-Topped Meatloaf Stuffed With Beer Cheese

Ingredients

For the Spreadable Cheese:
8 ounces extra-sharp cheddar
1/4 teaspoon Worcestershire sauce
2 medium cloves garlic, minced (about 2 teaspoons)
1 teaspoon powdered dry mustard
1/8 teaspoon cayenne pepper
1/8 teaspoon kosher salt
5 ounces dark beer, flat

For the Meatloaf:
1 pound ground beef
1/2 pound ground pork
1 egg, lightly beaten
3/4 cup quick-cooking oats
2 medium cloves garlic, minced (about 2 teaspoons)
1/4 cup grated onion
1 1/2 tablespoons tomato paste
1/2 teaspoon ground black pepper
1 tablespoon kosher salt
1/2 cup ketchup
2 tablespoons Sriracha
Four slices bacon, cut in half

Procedures

For the Beer Cheese: Combine cheese, Worcestershire, garlic, mustard, cayenne, and salt. Pulse a few times until just blended. With processor running, slowly add beer through the chute, Process until smooth, about 1 minute. Mixture will be soft but will harden in refrigerator. Transfer to a bowl, cover, and chill for at least four hours.

For the Meatloaf: Add beef, pork, egg, oats, garlic, onion, tomato paste, pepper and salt to a bowl and mix with hands until combined. Place a teaspoon-sized ball in a small microwave safe bowl and microwave for 15 seconds. Taste for salt and pepper and add more as necessary. Mix with hands until thoroughly combined, but no more than necessary. Combine ketchup and Sriracha in a small bowl and set aside.

Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate.

Form four balls of cold beer cheese using a generous tablespoon for each. Form four individual, oblong meatloaves around them. Using two halves, top each with an “x” of bacon, and slather generously with ketchup-Sriracha glaze.

Place meatloaf on the cool side of grill and cook, checking periodically, until an instant read thermometer registers 155°F when inserted into middle of meatloaf, 20 to 25 minutes.

Remove from grill, allow to rest for five minutes and serve with additional glaze and beer cheese.

Ketchup is OK for french fries but other than that it should just be something each individual chooses to use.

and should not be killed. The heart killing nature of it for humans is nature's way of saying...that's not for eatin'.

If you want to live long and prosper...don't eat dead pig.

or most anything really will kill you.

We can eat pig just fine. Just not in massive amounts.

And we can deal with fat/protein better than we can deal with carbs.

One thing common among ALL the groups of the world that live the longest...without exception....they eat little to no meat. But they more assuredly eat LOTS of carbs.

Our "natural" diet would have consisted of a very low carb low (by modern standards) with a higher percentage of animal products.

The crops that are high in carbs: potatoes, rice, wheat, barley, sorghum, corn, etc, are all fairly new inventions in our history.

They had wild ancestors sure, and we would occasionally pick up the comparatively tiny grains/tubers and eat them. But not nearly in the quantities seen since the advent of agriculture.

And judging by our skeletons agriculture, with it's shift away from a high protein to a high carb diet, was devastating to early humans. Universally people shrank and developed numerous bone and tooth abnormalities after they made the shift compared to where they were before.

A high carb diet has been a disaster for our species and we're starting to realize that.

The FDA's recommendation that we base our diet around grains was largely due to pressure from agricultural lobbying groups at time.

little to no meat is a common thread among ALL groups on earth that live the longest (while still being healthy). They do other things, as well.

Add to that the immorality of killing an animal, esp one more intelligent than your pets, to eat their crackling skin. Or to sit our fat asses on their skin in our cars.

advocates people to eat lots of vegetables (among 8 other things).

Not to eat a diet high in carbs. Those aren't the same things.

Which was my initial point, not that we should eat exclusively meat, but rather that if you're going to overdo it you are better to overdue meat and fat than carbs, which we are not well designed to process healthily.

A shift to a high carb diet is associated with diabetes, heart disease, obesity, and the like.

The food pyramid was heavily biased towards farming lobbyists at the time.

Shockingly a health plan written by grain growers said we should eat tremendous quantities of grains.

If we'd let the dairy industry write it cheese and milk would be at the bottom.

If we'd let pepsi write it "generic brown carbonated beverages not produced in georgia" would be the basis of our diet.

that the FDA recommends for humans you get roughly the same ratio that is given to cattle in a feedstock operation to fatten them up rapidly for slaughter.

And they're designed for a much higher carb, lower protein diet than we are.

that would be a little dry however dog can be stringy.

Maybe adding in a bit of milk fed veal to moisten it would help.
