There's a pancake mix that I have to smuggle back from the Pacific Northwest, called Snoqualmie Falls Lodge Pancake and Waffle Mix. The directions call for just adding water, and believe me, I've tried to improve on that, to no avail. With one exception: I take half of a banana, mash it all up, then add the water, mixing it with a wire whisk until the banana pieces are very small. Then, I add in the dry mix.

It makes beautiful banana pancakes that cook up well. The other half of the banana? Sliced up and sprinkled over the top of the stack. With real maple syrup, it's a delight!

but I won't feed that beast any more. I take a drive out to the PNW every couple of years, and I bring back a case with me. Once, I put a sack of it in my backpack to carry on board a flight, the TSA goons were scrubbing that thing down like it was C-4!

This sounds like something I should eat right now...I didn’t eat my dinner tonight. We ate out with my mother in law. My meal was terrible so I sent it back and settled on a piece of cheese and an apple at home. The smashed banana sammy sounds like heaven.

I worked with a midwife from S Africa and she would bring it for potluck. That was 30 years ago, it's been a mainstay on the Thanksgiving table ever since. None of that marshmallow stuff.

67. Bananas and yams with peanuts

2 large sweet potatoes peeled, cut into 2" pieces
4 bananas peeled, cut into 2" pieces
(depending on the size of your potatoes, you want the mixture to be about 1/2 and 1/2)

Preheat the oven to 350
Gently simmer the potatoes in salted water until they are fork tender, drain and set aside to cool slightly while you make the sauce.
Melt 1/4 cup of butter in a small saucepan
Add 1 cup of brown sugar
1/4 cup of orange juice
2 T peanut butter
1/4 teaspoon of salt
Simmer over low heat, stirring often, for about 5 min., until it starts to thicken.
Arrange the potatoes and bananas alternately in a shallow buttered dish while you wait.
Pour the sauce over them evenly, bake 30 minutes.
Scatter 1c finely chopped peanuts across the top, return to oven for 10 minutes.

4 eggs
2 cups sugar
1 cup vegetable oil
2 medium bananas - mashed to 1 cup
3 cups all-purpose flour
1 1/2 tspn baking powder
1 1/2 tspn baking soda
1 1/2 tspn ground cinnamon
1 tsp salt
1 1/2 cups shredded unpeeled zucchini
1 cup chopped pecans

beat eggs - blend in sugar and oil
add bananas - mix well
combine flour, bp,bs,cinnamon, and salt
stir into egg mixture
stir in zucchini and pecans - just until combined
pour into 2 greased 9" x 3" loaf pans
bake 350 - 50 minutes - or clean toothpick
cool 10 minutes - remove to wire rack
2 loaves - can wrap and freeze....

And now, need to find recipe for Banana Foster..

but in order of fave to "can handle" - banana cream pie, my Mother in Law's banana nut bread (always baked in a small coffee can), fresh pretty-much-green plain fruit, other baked banana bread/muffin things

invented by my uncle, Harvey Burke:

Toasted bread (your choice), slathered with smooth peanut butter, a sliced banana, two slices of bacon (crumbled) and a slice of canned pineapple. Top with toast and eat.

I don’t enjoy eating bananas but have a smoothie every morning and a banana is a must in those...even if the smoothie is green.

and actual bananas, too.

For a short time in the early 00's, YooHoo made a banana/chocolate flavored drink. It was soo tasty, but they discontinued it (AFAIK). It was a sad, sad day. The banana milkshakes from Checkers are also one of my favs.

I've always thought it was neat (and kinda odd) that banana flavor doesn't really taste like banana, but we instantly recognize and associate it with the fruit. Same with strawberry flavor and, really, most fruit-flavored stuff.

Avocados and bananas, even being ripe or mixed into a dish, wreck havoc on my digestive system.


Your image reminds me of my apple slices dessert. I peel and slice apples and place them in a casserole dish. Pour melted butter and toss in light brown sugar with cinnamon. Bake on 350F for 20 minutes. Vanilla ice cream goes well with the apple slices too. Yum!

It was good when it was warm.

This is a tough one to pick. I love banana bread and muffins, especially if chocolate is included (chunks or swirl). Most mornings I make a banana-peach-blueberry-vanilla yogurt smoothie with a dash of cinnamon and it's freakin' delicious. Peanut butter-banana-honey sandwiches are another favorite. I love bananas!

I'm going with a banana chocolate milkshake because ice cream. That's my final answer. I think.

Too many favs to name one favorite, but sort of in this order:

* My mom's homemade Southern baked banana pudding w/vanilla wafers & lots of meringue,
* Peanut butter and banana sandwiches on dark pump rye bread,
* Banana splits,
* Banana milkshakes,
* Sliced banana in Greek yogurt for breakfast w/drizzle of honey or sliced banana in cereal,
* Banana cream pie, or
* Just straight peeled banana (drizzled with chocolate syrup for a special treat).

Would love to try Bananas Foster some day (not traditional where I came from).

It's all good......
