In a large bowl, combine zucchini, flour, Parmesan, garlic and egg; season with salt and pepper, to taste. Heat olive oil in a large skillet over medium high heat. Scoop tablespoons of batter for each fritter, flattening with a spatula, and cook until the underside is nicely golden brown, about 2 minutes.

I made zucchini in some form for 21 dinners in a row. Family did not notice!

9. Zucchini noodles with homemade marinara and Italian meatballs

taste almost as good as regular spaghetti and meatballs dinner, and without the carbs my doc wants me to avoid. So i can have my Italian food fix more often thanks to that Apocalypse.
