With mint or with almonds, I prefer dark chocolate.

In baking or just to eat plain, gimme milk chocolate, preferably Cadbury.

White chocolate isn't my thing.

Dark chocolate is too bitter for me and I overdid white chocolate at some point when I was a kid, probably one of those chocolate bunnies at Easter. If I ate the whole thing at once, that would explain it.

And I'm really not a fan of chocolate with mint. When I was about 10, I sold Girl Scout cookies and I actually threw up over the Thin Mints. I didn't eat any of them, but the proximity was all it took.

I especially like dark chocolate truffles. There was a place I loved to go to in NYC called Vosges that had some really exotic combinations. Some of them sound strange, but the chocolate only had a hint of the other ingredients so that it wasn't overpowering, just enough to give it some complexity.

Some of the choices:

Absinthe: Chinese star anise + fennel + absinthe + 62% cacao dark chocolate + cocoa powder
(1) Balsamico: 12 year cask-aged Modena balsamic vinegar + 62% cacao dark chocolate + Piemonte hazelnuts
(2) Black Pearl: ginger + wasabi + 62% cacao dark chocolate + black sesame seeds
(1) Brown Butter: Vermont creamery cultured butter ganache + 72% cacao dark chocolate + Cadiz sea salt
(2) Budapest: sweet Hungarian paprika + 62% cacao dark chocolate
(1) Chef Pascal: kirsch + 62% cacao dark chocolate + dried Michigan cherry
(2) Rap: horseradish + lemon zest + praline + 65% cacao dark chocolate + cacao nibs
(1) Red Fire: Ceylon cinnamon + 62% cacao Venezuelan dark chocolate + ancho chili
(1) Polline di Finocchio: wild Tuscan fennel pollen + 62% cacao dark chocolate
(2) Tlan Nacu: Mexican vanilla bean + 62% cacao Venezuelan dark chocolate
(1) Oaxaca: guajillo y pasilla chillies + 62% cacao Tanzanian dark chocolate + pumpkin seeds
(1) Jazz: Café du Monde® chicory coffee + 62% cacao dark chocolate

I also like other chocolatiers, but this was a particularly fun place to go.

I used to go to the Soho shop when I lived in NYC and just buy a few truffles and eat one every night. I would just savor it. They would also do special chocolates for the season like champagne and rose or something like that. It was so good! It's not really any more expensive than any other top chocolatier.

It's really worth it if you are a chocolate lover!
