350 degrees preheated oven for 12-13 minutes.Watch close or the may burn. Chop and add to cookie dough. The toasting just adds another layer of flavor.

Butter Pecan Cookies


yield 16 large cookies

Thick and chewy Butter Pecan Cookies... made with brown butter! YUM.

Ingredients

For the Buttered Pecans:

1 and 1/2 cups pecan halves, finely chopped
1 and 1/2 tablespoons unsalted butter

For the Butter Pecan Cookies:

2 and 1/4 cups all-purpose flour
2 and 1/2 tablespoons cornstarch
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
2 sticks (8 ounces) unsalted butter, melted until browned
1 cup dark brown sugar, packed
1/2 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs, at room temperature
16 pecan halves, for decoration, optional

Essentially, powdered sugar, flour, lots of butter, and pecans (I prefer walnuts). Rolled in powdered sugar when they come hot out of the oven.

...from Scotland is the best there is. I’ve tried other brands, and they have all fallen short. I fell in love with Walker’s during my first trip to Edinburgh in 1974, and have been a fan ever since.

Basically peanut butter cookie with melted chocolate chips to which you add a bit of peppermint extract.

Marble the chocolate into the peanut butter cookie dough roll in balls and press down with a sugared glass.

Absolutely killer.

I love snickerdoodles as well. Probably because I learned to cook them when I was a kid. They have the best name.

Home made, not Pillsbury DoughBoy

Mexican Spicy Chocolate cookies
Lemon
Brown Sugar pecan
and others



Make up the dough shape into logs wrap well and freeze them.

When ready to bake, let them thaw for a bit, slice them and bake them.

Those chocolate cookies are awesome.

OTOH it is easy to just have a few cookies lying about the house instead of 60 or 75

Manischewitz (sp?) chocolate macaroons

edited to add: Tim-Tams. They are from Australia. I used to work for an Australian company and if anyone traveled to Sydney or visited from there, we would tell them that we would not let them in the building without a couple packages. They always obliged. Think of a KitKat candy bar in cookie form. You can get them at Target and well worth looking for on your next trip there.
