I am ambivalent on intestines - I like the Japanese style - Motsu - but am just so so on chitterlings

(15,805 posts)taste preferences linked to family or community culture and traditions. There are a lot of German ancestors in my family, so liver is still served with lip smacking appreciation. Sausages, made from all sorts of offal meats stuffed into intestinal casings are eaten with gusto. Pâtés made from other offal meats are spread on toast points during the holidays, and Thanksgiving wouldn't be complete without giblets in the turkey stuffing.
Don't get me started on fried pork rinds, or chitterlings, pig intestines for the uninitiated. Scrapple is another yummy dish that uses various porky scraps. Then there's pickled ox tongue, great for sandwiches, likewise headcheese!
Things I personally don't care for are tripe, gizzards or hearts, probably because they are too rubbery tasting.
