For breakfast: Cottage Cheese Pancakes with Sour Cream and Strawberry Jam! 😋



1 c cottage cheese

3 eggs slightly beaten

2 tbls vege oil

1/3 c all purpose flour or pancake mix

Combine wet ingredients, add dry whisk until smooth.

Pour 1/3 cs in lightly greased pre heated skillet. Cook over med heat until bubbles appear on surface. Flip and brown on both sides. Enjoy! 😋

Makes 2-4 servings depending on how hungry you are! 😏

Big time head cold hit last week - haven't smelled or tasted a thing in many days....hate these winter colds!

I'm always stumped on how to use the last bit of cottage cheese so it doesn't go to waste, and this is the perfect solution.
