hydroponic gardens right inside the store.

There was no lack of sunshine or danger of radiation, or lack of arable land.

They were just growing indoors in climate controlled conditions with no pesticides, only water and minerals. The price was about the same as outdoor produce, just not as much grown.

It was in the 1980s. Don't know if any markets in the USA are doing it now.

can be controlled and recycled. You could even grow massive amounts in some desert regions. With solar power, evaporators to draw water from the air. We could massively increase the production on an acre of ground.

As you say then forests and environments can be restored.
