They're thinking, "If we go against what the bearded one wants, then we'll be venison chops."

It may also be that they fear for their jobs. "Hey, we could be replaced by the red nosed bastard. So it'll now be 'Now, Dasher! Now, Dancer! Now, Prancer and Vixen! On, Comet! On Cupid! On, Rudolf and Blitzen!' And there is old Donner, venison chops."
