First of all, Santa is a fictional character. He is vaugely based upon a few different similar characters. Yes, they were all "white".

Jesus was anything but "white". He was a dark skinned jew. How dark can be argued.

Finally, "White Christmas" is a song written by a jew. Furthermore, it was written during a period of time when entertainment such as radio, TV, and movies were portraying Christmas as basically a secular winter holiday so as not to exclude any part of the audience. Huge numbers of "traditional christmas songs" they play today were written during this period including "I'll be home for Christmas" and Rudolph. I do wonder how the "war on Christmas" crowd would react to that.

St. Nicholas than in a way you can claim that Santa was a historical figure. The fact that he was born in what is now the country of Turkey does not make him white though.
