And if you fry fish in oil previously used for Turkey it will blow your mind.

(25 posts)The zucchini melt has parmesan, Swiss, and cheddar cheese. Yes, I'm a vegetarian, but I cannot imagine life without cheese.

(25 posts)1 cup chopped onions
1 cup chopped green bell pepper
3 cloves garlic minced
Sautee all of this together in olive oil. I also tossed in a healthy dash of hot sauce and a bit of black pepper but that's to taste.
4 cups chopped cauliflower
2 cups beans (black beans or pintos or even chick peas would work I think)
1 cup chopped tomatoes
1 can of peeled potatoes chopped into chunks
Take all of this, the sauteed stuff and the rest, and stick it in a crock pot with perhaps a cup of water. Let it cook for a few hours, stirring occasionally.
Yesterday was the first time that I made it. I served it with crescent rolls and it was a hit. Yay.
BTW, this is my adaptation of a recipe in "1,000 Vegetarian Recipes" by Carol Gelles. Excellent cookbook. I added the potatoes, added a few more beans, and used the crock pot rather than following her directions exactly.

Most of my vegetarian cooking is Mexican type food. I love Mexican food but I want to expand to other types of food.

(25,862 posts)It's unfortunate that most people only have it once a year. A whole turkey is not that difficult to fix, and I used to do it several times a year, not just for the holiday. Heck, there were times when in the middle of the week my kids would come home to a roast turkey dinner. Obviously not as elaborate as at Thanksgiving, but still.
People make far too big a deal out of cooking a turkey. And there are a bunch of bullshit memes out there about how you can't possibly cook a turkey so that if the dark meat is done, then the white meat is totally dried out. That's never been a problem in my experience. Buy a bird with a pop up thermometer.
Or that it's life-threateningly dangerous to cook the stuffing/dressing inside the turkey, because it will somehow grow fatal bacteria and all who eat it will die, or at least be sick. Huh? Just remove the stuffing/dressing from the bird when it comes out of the oven. No problem.
I've been known to fix a full turkey dinner for myself when I've been alone on the holiday, and enjoyed it immensely. Tomorrow I will be joining friends. I've made rolls and an apple cake, and tomorrow I'll do mashed potatoes. At their house I'll do the gravy when the turkey comes out of the oven.
Good friends and good food. It doesn't get better than that.

The first two or three times I fixed one, as a young bride, those pop-ups weren't there yet, and it was a genuine hassle figuring out when it was done. Now? Not a problem.
I'll suggest you buy a turkey and fix one in the next few weeks. Maybe have some friends over. I think you'll be very pleasantly surprised.

We all enjoyed it every year. Mom lived to 90 (shes the one who taught me to cook), and dad to 83.
I wont be cooking this year. No one to cook for. First year that I can remember that Im not cooking or helping.

(25,862 posts)I live alone, and in recent years didn't always have somewhere to go for this holiday, but I won't let that deprive me of turkey.
I ate today at a friend's house, and while it was wonderful and I have brought home leftovers, it's not the same. My house does not have the lovely smell of a roasting turkey, which usually lingers for two or three days.
I hope that you still had a good day today.

I usually end up hosting and cooking for a handful (10 or 12) family members on both holidays and since they are mostly not vegan, I cook what they like to eat. Two bring their own vegan contributions, and couple bring their own specialties; pies, green bean casseroles, etc., that are non-vegan. So those two days of the year I toss out the "rules" and eat right along with everyone else. For me, it's the right thing to do, and my own little way of avoiding fanaticism.

(2,857 posts)There are just 4 of us and eating out is easier and cheaper than me doing everyone's favorites alone. The place we are going is excellent and has all the classics for 15 bucks a head including drinks and dessert. I can't prepare a full Thanksgiving like they like cheaper than that

(2,857 posts)And it was excellent. If you don't have a large family to do big holiday dinners with, it is just a huge and expensive hassle to do alone. Today we had an amazing meal at a festive "restaurant" that is really a wedding event venue on the weekends and only open to the public on Thursdays. All the dishes you could want with drinks and dessert for 15 bucks each. Not bad.

(16,402 posts)The first is tomorrow with friends. They're having turkey and all the sides. I'm taking Quorn Tur'ky Roast for myself and anyone else who doesn't want animal flesh, along with the candied sweet potatoes.
The second is on Sunday with my son, and daughter and son-in-law after they get back into town. This one will be a full vegan spread. I'm making a veganized version of my grandmother's apple/sausage stuffing, as well as a vegan cranberry cheesecake.

The wife and I work every Thanksgiving and Cuban is our tradition after work.
There will plenty of Turkey over the next 5 weeks.

(11,949 posts)There are several great Cuban places in Tampa although none share the history nor extensive menu of the Columbias.
Check out their menu online. And their 1905 salad is the best meal salad I know of. They put the recipe online and we make it at least once a month.

(5,477 posts)Cut the turkey in half, and one half of it got rubbed with some Penzey's Northwoods seasoning, and the other half I rubbed with a garlic/hickory/bacon blend, and I also bacon-wrapped that half. Had some extra room in the smoker so I tossed in some hot and some sweet Italian sausage. My wife used the drippings for her sweet rice & giblets dressing. Getting ready to pack it all up and head to a friend's house for our annual feast.
The friend is doing a ham, sausage & peppers, and a huge amount of cheeses and various sausages, salami, and other assorted goodies. My wife is making a sweet potato Mousseline, and most of the others that come to this dinner usually bring additional goodies.
What am I having for Thanksgiving? Probably indigestion!
