I cooked at one about 35 years ago, for a couple of years. I don't know if it's the case now, but after the training period was over, the cook was forbidden to look at order tickets. Every order had to be memorized as it was called out by the wait staff. Thousand dollar lunch runs (in 1980) between 11:00 AM and 1:00 PM, were routine, so an exceptional memory was a must.

Their hashbrowns were dehydrated and reconstituted with hot water at the restaurant, but still very tasty.

Seriously, it's an important employer down here. In the small hours of the 2008 election day, before heading out as a poll watcher, I stopped at a Waffle House and got to watch a mostly toothless staff (some hard lives lived) discussing the election. Soberly and coherently, and not so ignorantly either. Loved it.

...as whether or not a Waffle House stays open, how fast a Waffle House re-opens, or whether or not there is an increase in customers because of infrastructural break-down - stranded communities and travelers will congregate at the local Waffle House if it can remain open.
Waffle Houses are typically the first businesses to re-open. And because of they tend to be in locations where there are weather emergencies, they have natural emergency protocols that allow them to manage their resources to continue operations during floods, heavy storms, hurricanes, tornado aftermaths for close to a week in isolation.

i think there are a couple of reasons why the late night is drive up only.

No syrup - just pecan waffle butter delivery on a fork.
I know the waffle batter is made from a likely chemical-laden powder, out of a box. But, thank goodness, there are no Waffle Houses near me. Here in Florida.

80 thousand years ago, when the interstate from Illinois down to Florida was still under construction, we used to drive from Bloomington to Daytona Beach, no stopping except for gas, and for Waffle Houses along the way. Could leave Bloomington (Il.) around 4:30, after work, and be on the beach in Daytona by noon. Waffle Houses always felt safe.

From the looks of Google mapsthough, it seems that the WH is now invaded Florida. All down I-75, lots in Orlando and other cities and towns.

After I retired I moved from Florida to Tennessee (yea I know. I did it bass akwards) when I left Florida I could never find a WH, it was all HH. I'm actually in Orlando for a Dr's appointment for my son, and they are all over now.

That's not bass ackwards, unless you like the ocean. I live right below Tampa now.

I did not come to Florida by choice, really, the huge telecom I worked for closed the data processing office in Bloomington, I got transferred to Durham, they closed that one two years later, got transferred to Tampa. Then they shipped as many jobs as they could to Chennai, laid most of us off due to that and a merger, then replaced what was left with mostly H-1B visa holders. I am retired now, but the pickings were slim, and of course the days of relocation were long gone. Hope, at some point, to get a little place in Gulfport, over by St. Pete.

No Waffle house near me, I thought - but looking at the map, there is one 5 miles away, and one 6 miles away. Probably drove right past the nearest one a couple of times in the past week, but looks like it is in the middle of a good-sized cluster of restaurants, not a beacon of warm yellow light, seen from the interstate.

I am a low-carber, so I hate having this information!

Orlando is a long way to go for a doctor - I hope things turn out well for your son.

“I was in Nashville, Tennessee last year. After the show I went to a Waffle House. I'm not proud of it, I was hungry. And I'm alone, I'm eating and I'm reading a book, right? Waitress walks over to me: 'Hey, whatcha readin' for?' Isn't that the weirdest fuckin' question you've ever heard? Not what am I reading, but what am I reading FOR? Well, goddamnit, ya stumped me! Why do I read? Well . . . hmmm...I dunno...I guess I read for a lot of reasons and the main one is so I don't end up being a fuckin' waffle waitress.”

Was finding a Waffle House anywhere. Never had a meal I didn't like there.
