While many regular American grocers are running out of meat, specialty food producers have plentiful supplies -- for those who can afford it.
Production of luxe varieties like heritage pork, grass-fed beef and Amish-raised chicken are expanding at a time when coronavirus outbreaks at mammoth plants operated by Tyson Foods Inc. and Cargill Inc. have wiped out about 40% of conventional U.S. beef and pork capacity in recent weeks.
So while lower-income consumers are finding meat hard to come by -- with Kroger Co. and Costco Wholesale Corp. rationing purchases -- richer Americans have their pick of fancy offerings that often cost twice as much, or more.
This is just the latest way that the coronavirus pandemic has exposed a socioeconomic divide in America, disproportionately affecting low-income and minority populations more than others. In the end, it could dictate who has access to affordable meat and who doesnt as outbreaks at the nations beef, pork and poultry plants spread.

What really makes my eyes bug out is when the belt is full of multiple packages of beef, pork, chicken, and seafood, to the tune of easily $350 without the price of other purchases.

(60,074 posts)I was raised on ham hocks, and love them with Pinto beans or Sauerkraut.
If you havent cooked with Sauerkraut, rinse it first to remove some of the salt.
Cook the shit out of the hocks. I change the water when cooking. I use one hock per 1/2 Lbs of dry beans. Chili powder is good in the soup.
Beans and greens are great. Collards are cheap, mild and nutritious. As with all greens, find younger bunches. They cook down faster.
Tilapia is a lot cheaper than Salmon.
Eat low on the food chain. Its cheap down there.

(48 posts)comes in different flavors now, Hickory Smoke, jalapeno, bacon. I can use it in a variety of ways, and it's still inexpensive. It doesn't hurt to cut back on meat because there are lots of ways to get protein other ways. We have been a more meat and potato family, but it's not hard to adapt. We get most of our meat at a local butcher rather than a grocery store because the quality is so much better and many of the prices are cheaper than the grocers. I can make a roast chicken last for four meals. I grew up poor, was a single mom for 11 yrs. most of the time without child support, so my food budget was small and I still fed my kids healthy meals on the cheap. I remarried and had 2 of my 3 kids living with me at that time, four stepkids every other weekend. Things were tight. After the kids were grown, things improved a lot financially, but I've always kinda kept doing like I always did. The way I lived most of my life, I am not afraid of shortages, I'm prepared to deal. We will all have to get creative.
