To fill the vacancy of the vice presidency requires confirmation by a majority vote of both houses of Congress.

Now I grant you it is extremely unlikely, and I honestly can't see it happening. But in the unlikely event they were to both get the disease and ultimately die of it, regardless of the order of their deaths or the time gap between the two deaths, the House could theoretically delay or deny confirmation to see what happens with the one who survives the other.
