But many (most?) of the protesters do believe it.

So why are they working for the Chinese?

They believe specific tiny snippets for specific situations because it makes them feel good/important. They don't have an actual world-view based on a set of facts. Instead their world-view is based on their emotions and desires surrounding specific SINGLE facts.

For example:
Flat-Earthers don't believe in atmospheric refraction of light, except when it allows them to handwave away questions about the horizon.
They don't believe in General Relativity, except when it allows them to attack Newtonian gravity.
