Using Cannabis to Change the World: Introducing Simply Pure

Dear DU,

Although I have been unable to write about it until now, it has been my pleasure over the past year to work with a group that is about to completely change America’s perceptions about what medical cannabis is and how we may use it to our great benefit. Last week, this organization was featured on CNBC’s new hour-long special “Marijuana USA” and NBC’s Nightly News Sunday broadcast.

Simply Pure is the nation’s first purveyor of gourmet, chef-created cannabis edibles that have been laboratory tested for potency, purity and consistency. The group is a triumvirate of industry all-stars: Scott Durrah has owned award-winning Caribbean restaurants in L.A. and Denver; Lauren Gennett has prepared her delicious and healthy vegan meals for Nancy Pelosi and Jared Polis (among many others, I had to give props to my two favorites) as a personal chef and owner of The Pure Gourmet in Boulder; my lovely girlfriend Rachel Wolpo has spent the past several years working as a patient advocate and cannabis cookery instructor for venues around the state, including the recent Plant Medicine Expo with Richard Belzer.

In 2011, The Simply Pure School of Cooking will open its doors to an inaugural class of Simply Pure Master Chefs: the industry standard for excellence is our Master Chef certificate. Students will work as personal, medical chefs for HIV/AIDS, cancer and hospice patients across the state as a condition for graduation.

One of the most fascinating things about the Colorado Medical Marijuana community is the prominent role of women as teachers, advocates and role models. Wanda James (Scott’s wife and partner; you can see her in the CNBC episode) has worked on behalf of veterans for years (she was Polis’ campaign manager the first time around) and was practically single-handedly responsible for the recent VA reversal on medical cannabis use for veterans; Rachel is constantly surrounded by women of all ages whenever she gives a cannabis cooking demonstration. Lauren is a tireless proponent of natural meat-free cuisine. They really are amazing individuals!

My role is the best: I wrote the soon-to-be-released cookbook and I get to sample everything before it goes to market! I can't tell you how excited and pleased I am to share this with all of you.

You can find the website at www.simplypure.com; there are product descriptions, bios and photos for your enjoyment. I'm sorry to say these products will be available only in Colorado for the next few weeks; we do have plans to expand our market into other medical states in 2011.

For those of you who live in Colorado, the Simply Pure Master Chefs will be teaching Cannabis Cooking Workshops in our 10,000 sq ft booth and stage at KushCon, the nation's largest marijuana convention held at the Colorado Convention Center Dec 17-19. There is great music there all weekend including the Flobots on Friday night and there are massive giveaways all weekend, including several large "grow bus" modules (exactly what you think they are!) and a ton of vaporizers. It will be a great time!

Americans are finally beginning to understand that cannabis is a safer, more natural alternative to an entire host of dangerous, over-prescribed pharmaceuticals and not the devil weed Prohibitionists irrationally fear. It has been an honor to post here over the past few months and I am proud to introduce you to these outstanding chefs and their delicious edible treats. They are my good friends and peers and they have quite literally placed their well being, freedom and career on the line to create this groundbreaking group. I am their biggest fan.

1. I wish I knew about you before I had to leave Denver.
My edibles were beautiful, I spent 4 months of sweat equity coming up with about 2 dozen recipes. We were *this* close to opening a dispensary before our funding pulled out on the day we were to sign the lease.

Good luck, I saw the CNBC special last week.

2. This is so cool!
This is a wonderful thing and I'm really happy for you and your state. Cooking with cannabis is neither easy or to be taken lightly. Edibles effect different people in different ways and it's really hard to make the same edible the same consistency and strength every time. Doing that is the key, and from what I've seen, this woman seems to know her stuff.

I've been looking for a reason to visit Colorado. After harvest, I might just have one now.
