EVEN preschool teachers unwind with a round of drinks now and then. But in professional kitchens, where the hours are long, the pace intense and the goal is to deliver pleasure, the need to blow off steam has long involved substances that are mind-altering and, often enough, illegal.

1. I always thought fresh baked "Whoopie Pies" filled the bill...

.. then again.. anything with vanilla frosting on the inside that oozes out and fills your taste buds.... is a winner.

followed up by a cup of fresh brewed coffee or a glass of cold milk...

There is an extremely nice,WELL konwn upper priced Restaurant/Bar on 6th Street in Austin Tx that I worked for back in the early 80's that will be for this post's sake called "The Cafe" (AS it it still Open)

The first day that I went to work for The Cafe was at best hectic,Waitrons and Food Runners runnin crazy,Pans flamin and banging,Food flyin,People shoutin and cussin,I had no idea how I was supposed to "Get in the Groove" with all that was going on around me.

George (The Chef) told me it would be better if I found a corner and watched for the first nite,Tomorrow I could start at my station.
I found my self a safe corner to sit and follow the goings on.

Two Dining Rooms,Full Bar,Full Banquet Facilitys,Bakery,Espresso Shop "Shitfire there is a LOT going on!"

This was Friday nite...over 60 People runnin their ass off for 7 hours,just over $50,000 for gross Food and Bar Sales...Yup just another average Fri nite.

Until Midnite...

The Hostess locks the front door and in a loud Texas Twang Shouts "UNION RULES!"
Everybody stops what they are doing,sets down anything in their hands and walks thru the kitchen and out the back door,into a storeroom and up a ladder into a loft above the Dishroom.

WTF??

It looked like a Judging for the Cannabis Cup!! 43 Doobies,Shift Beers in hand,We spent the next 30 min. in the "Decompression Chamber" Decompressing

This was (And still may be for all I know) a Nitely Ritual.
