Thunder's Green Wise Chicken and Rice (20 minutes to a great meal)
There have been many postings on various low cost recipes that people can cook up to stay on a budget. Well here's my staple Home Made Chicken and Rice from the microwave. The original idea was to make a fast hot meal, without heating the house up.

Additionally, this method works to cook plain rice, and you can add any meat product you want.


Requirements:
1 ceramic/or glass cooking dish with lid. Round with FLAT sides. (Walmart ceramic bean pot (1 or two quart $3.00ish). This is really a great dish and enables a lot of microwave cooking.
1 microwave.
1 Tea pot: (mines an electric) This is to preheat the water to boiling. you can also heat the water up in the micro, but I use the teapot.
1 Cup measuring cup that is capable of measuring boiling water without breaking and without scalding you.

ingredients:
Chicken (whatever chicken you want. I use one cheap skinless/boneless chicken breast)
1 cup Rice (the cheapest rice you can find IS GOOD RICE)
2 bouillon cubes ... those cheap little cubes (chicken flavored is probably the best)
pepper to taste.
2-2 1/2 cups of boiling water (expensive rice 2 cups, cheap rice 2 1/2 cups.

Process:
Preheat water and while it is heating dice up the chicken.
Put Chicken, Rice, and pepper into your ceramic dish.

Now for the hardest part of the whole thing: unwrap the bouillon cubes, crush them in the measuring cup.

When the water is boiling, fill the measure cup to the one cup level and stir to dissolve the flavorings (hint it's better to measure 1 cup two times, since the first cup rarely dissolves all the flavoring)

Put the dish in the microwave uncovered and nuke on high until the concoction boiling again. (it can get messy if you can't see it's boiling)
Stir to make sure the rice doesn't stick together.
Put the cover on the bean pot and nuke at the lowest power for 15 minutes.

When the bell rings ... meal time!!
