There are different kinds of kefir, or maybe kefir is just a fermenting process

I think kefir includes, but is not limited to, yogurt. Some kefir is non-dairy?

It is the best thing for an upset stomach, especially when hang-over induced....

2. It is good food. I like the texture and even its slight tartness.

I love the fact that it is drinkable and you can pour it on things.

I bet it isn't hard to make.

7. I believe in this stuff. After living in Russia, where it was a daily staple, I came back to the
U.S. to find it at Whole Foods for four bucks a bottle. It was not the same.

The kefir in Russia is much more intense.
Its much more carbonated, sourer and contains a small amount of alcohol.
It also has the consistency of butter milk.
The stuff you get here is more like yogurt and is definitely missing the alcohol and carbonation.
I am sure it still has health benefits, but nothing like the real stuff.
Then again, it could be that I can't afford to consume as much every day as I did there were it was about 30 cents a bag.

I have heard the FDA won't permit the same kind of fermentation nor the use of the real kefir grains from the Caucasus
I also think it may be the the American public wouldn't like the real deal.
Its pretty nasty the first few times.
It was prescribed for food poisoning and after drinking about three cups of the stuff, I suppose I developed a tolerance.
It took a few months for me to actually like it.

I have an Uzbek friend here who also missed it so she ordered the Caucasian kefir grains and makes it herself.
I'm thinking of doing this myself.
I hope it keeps getting popular here, though.

9. I liked buttermilk as a kid. Mom served it with beans and pan cornbread and homemade dill pickles
and sliced onions and plane cooked turnip slices with butter.

14. I did too! And your mom sounds like my grandmother. The beans and pan cornbread with sliced onions
and pickles. Only they would be bread and butter pickles.
What I wouldn't give for just one more meal at her table.

11. My wife has been drinking it for a couple of weeks
(No, not non-stop!) She loves the effect it's having on her digestion, weight, and general feeling.

To me, it tastes just like buttermilk, which I've never been crazy about.
