We could feed the homeless, at least this winter.


The deer population is very high this year. On the trip home for Thanksgiving, we saw many dead
deer on the side of the road. In Mississippi alone we saw at least 30. And, in Illinois we
saw at least 35 on the stretch of I57 from Benton to Effingham. That's not counting all the deer
strapped to cars, trucks, in vans, on trailers and so on, but they don't count.

It seems to me that you could collect all those deer and use them to feed the homeless, since they
are so stressed for donations this year. It is cold enough right now in Illinois you wouldn't
even need a refrigerated truck. Just load'em up and take'em where you need them. Oh, and surely
there would be some experienced person to clean and prepare (butcher) them.


Am I wrong to think this could work?

11. Yes very true. You have to take out the glands in the legs.

You have to take the skin and guts out immediately something like with in a couple of hours
or they start to deteriorate and it does poison the meat.
This is old timer knowledge passed from generation to generation. My dad and grandfather taught me and their fathers taught them.
Something about the gland ( I don't remember what it is called) releases something that turns the meat bad. The liver is inedible unless processed correctly, deer eat things that we cannot because their liver can process the toxins , such as laurel which is very toxic, it is concentrated in the deers liver and kidneys.

Some hunter friends were there this year and they bagged a deer. They hung him in the barn and the next day they cut some tenderloins and cooked them. Yum. I don't usually like the taste of deer, but this was a young buck and it didn't have a real strong taste to it.

They gave us a haunch which I removed fat and skin soaked in salt water for 3 days in the fridge, change the water each day. Use 2/3 cup kosher or sea salt, with springs of fresh sage. That pulls most of the gamy taste out. I deboned it it and used thin sliced onion, sprigs of fresh sage, savory, minced garlic, 3 slices of bacon,fresh ground black pepper a small amt of rosemary and thyme, I put all of that inside tied it up and sprinkle some of them all on the outside, put in a baking pan with a tight lid put several slices of good bacon on top (will need the fat), pour in a good beer and cup of coffee, set the oven for 300 and let it cook slow for 3-4 hrs with a thermometer to 185 degrees, NO SALT it will dry and toughen the meat out. When done , take the meat out set aside to cool use the drippings with 1/4 or 1/8 cup flour and a half cup of whole milk to make the gravy. serve with parsley potatoes or smashed, corn and green beans (from our garden. Go easy on the thyme and rosemary, too much will overpower the meat.

actually know about venison. I grew up on a farm and my Dad loved to hunt, but he never, ever shot a deer. He loved watching them and didn't like the meat so much. He preferred rabbit and squirrel.

14. Depends on how fresh they are. Perhaps a public bulletin could be put out

saying if you hit a deer, please call # asap. Some places you can be put on a list for roadkilled deer or moose. Call your local fish/wildlife people and ask. Or state troopers.

After you have shot and field dressed your deer you can drop it off at one of the participating meat processors who will process the deer and give the meat to local food banks and other charities.

And who would butcher them?

And they'd have to be retrieved almost immediately for the meat to be any good.

There's a reason why Leviticus contained an admonition against eating roadkill. It's not sanitary.

And restaurants, too.

Grocery stores have to toss meat, veggies and other perishables, and in some places there are programs to gather them and feed the homeless.

It may already be done in my area, but it never hurts to make sure. I just hate it when people waste things and food.
