Gluten-adverse gente, check out these chiles rellenos.


I hope none of you experience the pain and acute discomfort of food allergies of any sort. It seems to me more and more people are discovering gluten intolerance. Look up Celiac on the Googles, or "gluten free" to get an inkling.

If you have familiares or friends who suffer from known gluten allergy, or gente who have itchy bumps on their elbows and nalgas, or persistent and chronic foul stomachs, cooking food for them can bring them real danger, or real pleasure. Here's a page of Mexican food recipes that all are gluten free, including my latest, chiles rellenos. The secret is making your kitchen contaminant-free. Don't heat tortillas de maiz on the comal after you heated up las de harina, for example.

I had unexplained dizziness (extremely bad, to the point of having difficulty walking) and migraines, swelling in my ears, and constipation for two years until I gave up gluten.
