10. My sister just called me from work
She works Downtown Pittsburgh and said that anyone who comes out of buildings in the area are being tackled to the ground by the SWAT team. I guess she won't be leaving work anytime soon.

buildings, per MSNBC. So your sister's reports are right on the money...

They are interviewing a lady in a Subway Shop, they're on lockdown, not allowed to leave! They shoved people on the streets indoors!

The perp has a high powered rifle and is wearing a white jumpsuit. SWAT, Bomb Squad and tons of cops everywhere!! Helicopters!!

The guy is in the CIA BLDG, supposedly, now...in a WINDOW, pointing the rifle OUT.

The white outfit DOES sound like a pissed-off chef, dunnit?????

I know it's not that close but the entire downtown will be in chaos. Getting home will be difficult.

21. The building is downtown, this started at 1250 this afternoon
They are showing footage on TV now...cops everywhere. Guess the guy is INSIDE the CIA building, wearing white clothes, pointing his high powered rifle out the window...

Wouldn't it be something if the report came from a half blind person, who mistook a chef shaking a dry mop out the window for a killer????

roast pigeon with blackcurrants

Wood pigeon is a very under-rated meat, a lot of people are put off by the fact that they are lovely birds that fly around cities and towns.
Wild pigeons are delicious to eat and are extremely good value for money. They also make a good stock. Older pigeons are better braised or stewed, younger birds are great just roasted very quickly, and eaten pink. The meat is quite strong, therefore you need a little acidity such as blackcurrants to balance the richness.

This recipe looks complicated, but it really is quite simple, the hardest thing is the shopping! There looks like quite a lot of ingredients in the stock, but these are essential to achieve a rich, full flavoured finished sauce. The stock also makes a great broth or winter soup.



Serves: 4
Preparation time: 15 minutes
Cooking time: about 45 minutes - 1 hour in total

4 pigeons

Vegetable oil
1 carrot, peeled and chopped finely
1 Small onion, peeled and chopped finely
1 Stick of celery, chopped finely
½ Small leek, washed well and chopped finely
2 Cloves of garlic, crushed

2 tbsp / 30ml Red wine vinegar
1 Glass of red wine

2 Bay leaves
sprig of rosemary
sprig of Thyme
1 tsp / 5ml Tomato puree
6 Juniper berries crushed
Few black peppercorns
well flavoured chicken stock

Touch of Cassia liqueur
2oz / 55g Fresh blackcurrants

Salt and freshly milled black pepper
wilted spinach, well drained, to serve
small cubed potatoes roasted with garlic and rosemary, to serve

Preheat the oven to 220°C/425°F/Gas 7.

Remove the legs and carcasses from the pigeons to leave you with 'crowns' - you can ask your butcher to do this for you.

Chop up all the bones and legs, place them in an oven tray then roast until lightly browned.

Meanwhile, heat 2 tablespoons of vegetable oil in a saucepan and add the chopped vegetables and garlic. Lightly brown over a medium heat but do not allow to burn.
Add the roasted bones to the vegetables. Place the empty oven tray over a low heat, add the vinegar and red wine and bring to the boil, scraping all the little brown bits from the bottom of the tray where the bones have stuck - this gives the stock it's flavour.

When all the bits have been loosened add the liquid to the vegetables and bones.
Next, add the herbs, tomato puree, juniper berries, peppercorns and chicken stock. Bring to the boil, turn the heat down and simmer for 30- 40 minutes, skimming all the time.

Once cooked strain well, place back into a clean saucepan and reduce gently until you have a well reduced and syrupy stock - do not over-reduce or the stock will taste like Marmite. Strain well through a fine sieve.

To finish the sauce, reheat, add a touch of liqueur, season and warm through again then add most of the blackcurrants. At this point the sauce must not boil or the fruit will break up. Cover and keep warm (you can add 10g of unsalted butter here to give the sauce a nice gloss).

Preheat the oven to 220°C/425°F/Gas 7. Add a little vegetable oil to an ovenproof frying pan, heat, then add the seasoned pigeon crowns, breast side down. Once browned, turn onto the other breast and place in the hot oven. Cook for 15 minutes then remove the pan from the oven and leave to rest for 5 minutes.

Warm the wilted, drained spinach in a little melted butter. Arrange the cooked potatoes over the bottom of warm plates, along with the spinach. Slice the pigeon from the crown with a sharp knife, it should be beautifully pink, then carve each breast into three or four slices and arrange carefully over the potatoes and spinach.

Spoon over a little sauce and a few extra blackcurrants - that's it!
