Seems that Evangelion is getting a touch-up

There are now two films with the name "Rebuild of Evangelion:""You Are Alone" and "You Can Advance." There are two more animated films to come out (Rebuild 3 and 4). There is also a supposed Evangelion live-action in 2012 though it's still on hiatus.

1. The one time I watched Evangelion...

a girl was telling a guy that thing get bigger when they get warmer, she then started to rub her breasts as an example. My wife walked in just at this moment and said, "What are you watching?" using her 'I just caught you doing something naughty' look. My wife enjoys hentai, she watches it more than I do, but I still felt embarrassed for some reason and quickly changed the channel.

I enjoyed Blue Gender, is Evangelion similar?

3. It was on Adult Swim I believe. I think it was called Neon Genesis Evangelion.

If I were to watch some Evangelion, which series or version should I start with?
