Does anyone want cupcakes?

Last time I stopped by, I promised cupcakes and after a marathon baking session, there's enough for everyone. These are strawberry vanilla. Through the magic of the internet, they are vegan, fat-free and have zero calories. Feel free to take seconds.

it belongs here. Those are pretty cupcakes and you did great color wise. They didn't get that yellow tint so many food photos get. (Including my feeble tries.)They are almost too pretty to eat.

9. Banana Split Cupcakes with Tequila Frosting?

Comes from reading a Paula Deen status about banana split cupcakes and then a friend's status about cupcakes and tequila party -- why not blend the two?

I'll never make either one. Wanna try it?

I just thought a tequila and cupcake party was hysterical, and then saw the banana split cupcakes immediately after. Although rum would probably be better. Although I don't drink, so like I said, I probably wouldn't be making either one. Then again, son in law made a chocolate bread pudding with grand marnier in the whipped cream, so maybe...

12. I can't eat dairy

I use vegan dessert recipes because they're designed to work without dairy. Your link isn't working but most recipes can be adapted. Whipped cream is difficult to fake though.

You could just use oil instead of butter, healthier too. And applesauce instead of yogurt, or soy yogurt. Do you do soy yogurt? And frozen whipped white stuff isn't dairy. It's not healthy, but it's not dairy, lol.

This actually looks pretty good on second look. I think I will make these, without the topping and booze.

Yes, I use oil instead of butter. I've never tried soy yogurt for baking but soft tofu is used in some recipes, so it should work well. Vinegar, esp. apple cider vinegar, makes a good substitute for eggs btw (combined with the oil). I'm not sure about the miracle whip-type stuff. Some of them contain lactose or caseinate, which are derived from milk.

I think I'll give that recipe a try.

Your cupcakes are delicious. For next time; I wish I had a recipe for you... *Carrot Cake Cupcakes* ...the best I ever had was at a funky restaurant in Portland, Oregon called Old Wives Tale. The carrot cake was vegan and made from spelt flour. I began my quest for the very best carrot cake in the U. S. 6 years ago and found it there.

18. Mmmm.... Strawberries...

Looks really tasty. The look of the strawberry made me crave them enough that I went out and bought a few pounds of locally grown strawberries. I'll have to try my hand at food photography some time. I hope that when I do, my photos turn out as well as yours. (Mine probably won't be nearly as good but it's something for me to work towards.)
