1. Easiest way-- find a karaoke version of the song

Either on CD or an MP3. That's probably the easiest way to do the production part.

If you can't find it, I know that there used to be devices for sale that would remove most of the vocal track from a song. I haven't seen one around in a while, but my wife's old stereo used to have that functionality built into it.

you could also just do the guitar piece once and loop it. i think its actually a looped guitar piece to begin with.
