On HCFS.
Please remember that when it comes to discussing high-fructose corn syrup, lack of correlation proves causation. Anyone who says otherwise is a shill for big science/pharma/whatever desperate to hide the conspiracy.

For example, HCFS caused the Tunguska event of 1908, attacked Fort Sumter, and caused soldiers to freeze to death at Valley Forge.

That is all.

2. HFCS is about the same quality of food
as is the science surrounding it. JUNKY! Ugh. How stupid does anyone have to be to think that sugar of ANY TYPE is good for you? How hard is it to understand that everything in moderation is the key to nutrition. I cannot believe the lack of common sense that people show with this crap

4. Duh...agave and honey are 'ideal' sweeteners.
Neither have any fructose, which should be more accurately called "poison." :rofl:

7. Rationalism is way less fun than demagoguery.
I mean, a skilled demagogue could whip up a movement to ban fructose complete with people carrying signs and shouting expletives while they drink agave syrup in their coffee. How much fun would that be?

9. When I make fudge around the holidays
about 1/2c HFCS is used along with granulated sugar to reduce grainyness. I'm sure if I took out the HFCS and used all granulated sugar (cane sugar of course) I could eat an entire 8 x 8 pan of fudge every day for years without ill effects.

10. Thanks for the tip. I've been making fudge the past couple of holiday seasons.
The flavor has been good but it's grainy. I'll have to try HFCS this year.

12. I assume you aren't making confectioners sugar type fudge
which will inevitably be grainy. I make the old fashioned (hey, that phrase automatically means good for you) kind where you boil sugar, corn syrup and cream and then pour over unsweetened chocolate. Also good with walnuts!

Your fudge sounds like my mother's. And your post made me very hungry.

Mom usually makes two kinds of fudge at Xmas - chocolate with walnuts and peanut butter with pecans. (We are from Upstate South Carolina.)

Since I live in Los Angeles, those years when I could not make it home for the holidays, she would send me a big care package including the fudges.

She usually sent so much that I took it to work and shared it.

One year, a couple of co-workers complained that the fudge must have alcohol in it, because it made them "feel drunk." Part of the problem may be that these co-workers belonged to some...enthusiastic church out here, of the Evangelical persusasion. They were always sniffing around for evil and generally looking for something to complain about.

Well, I never felt drunk after eating the stuff. So I asked my mother if she was an active Agent Of The Devil, slipping alcohol into Xmas goodies in an attempt to poison the faithful, bring on the Apocalypse, etc.

She was puzzled too, and said the only possible alcohol in the fudge came from the old-fashioned vanilla extract she used. Which contained some alcohol, but a really tiny amount.

So be careful, or eating that fudge might get you a DUI!
